When you change the line "online-mode", your server will reset all the players inventories and statistics as it creates new (local) UUIDs for every player.
How to Enable Cracked Players?
Head over to the Game Panel and stop your server.
Navigate to the "Properties" tab.
Find the following options, and change their values from "enabled" to "disabled":

Done! You can now start the server for changes to take effect.
1. How to Prevent Username Stealing on Your Cracked Server?
If you disable online-mode the players WILL NOT be authenticated by Mojang's servers before they connect which means that anyone can log in to anyone's account.
To prevent griefers/hackers from gaining access to other player's accounts you'll also need to install an authentication plugin like AuthMeReloaded (or similar).
For Fabric servers you can install the EasyAuth preset instead.
When players join the server for the first time, they'll need to set up a secure password using the /register command. This way, only they can access their account, keeping it safe from griefers and hackers. Until they log in with their password, they won’t be able to move, place blocks, use commands, or access their inventory—so their account stays secure.
2. How to Get Skins Back?
The players will not have any skins when online-mode is disabled by default. They will all be rocking the Steve and Alex skins.
The skins can be restored with the SkinsRestorer plugin (Paper, Spigot, Fabric and Forge).
